By law, bourbon barrels can only be used once. In accordance with federal regulations, all bourbon whiskey has to be aged in brand-new, charred oak barrels that must be discarded after the aging process is complete. Most bourbon distilleries sell their used barrels to other alcohol producers when they’re done, accounting in part for the recent plethora of bourbon barrel-aged craft beers on the market.
The Spirits of Pawling
The Spirits of Pawling explain the origin of Bourbon. With French assistance in the young nation’s war of liberation against the English crown, American Whiskey received the name Bourbon. A county in the present-day border region between Indiana and Kentucky was given the name Bourbon after the French royal family’s victory over the English (Bourbons – French Royal Family 1579-1792). First, the Bourbon logo on the casks indicated the region of origin. As Whiskey from Bourbon County quickly gained a reputation for its high quality, the addition of the term “Bourbon” to whisky from the entire region became increasingly common. In the following centuries, the Bourbon County was divided and changed several times. However, there is still a county known as Bourbon east of Lexington today. Sadly, there is no longer a distillery in the entire county.
