Recipe: Clover Club

1 large egg white
3 oz. gin
1 oz. dry vermouth (preferably Dolin)
1 oz. fresh lemon juice
1 oz. Raspberry Syrup (see recipe)

Step 1: Combine 1 large egg white, 3 oz. gin, 1 oz. dry vermouth, 1 oz. fresh lemon juice, and 1 oz. Raspberry Syrup in a cocktail shaker.

Step 2: Seal and shake without ice for 5 seconds to froth, then unseal shaker and add ice. Shake until well chilled, about 10 seconds.

Step 3: Strain through both a Hawthorne strainer and a fine tea strainer, dividing between 2 stemmed cocktail glasses. Garnish each drink with a raspberry.

Gin was first made as a medicine by monks and alchemists all over Europe, especially in southern Italy, Flanders, and the Netherlands, to give them aqua vita from grape and grain distillates. In the spirit industry, it then became a commodity. Following the introduction of jenever, a Dutch and Belgian liquor that was originally used as a medicine, gin gained popularity in England. Despite the fact that this development had been taking place since the beginning of the 17th century, the Glorious Revolution of 1688, led by William of Orange, and subsequent import restrictions on French brandy led to the widespread use of gin.
